| Can be either an electric spit, in the oven,
or even a hand-turned spit in a beautiful fireplace.
In the first case, the oven, it is advisable to put a dripping
pan with a drop of water in the bottom of the oven to collect
the meat juices without burning.
Occasionally, brush the Gallettos (attached with the appropriate
ends on the spit) with a little good oil, salt and herbs.
Cooking time is approximately 45-50 minutes, depending on
the power of the grill.
If using a fire, keep the Gallettos by the side and not directly
over a flame, turning the spit regularly. |
